Mornings can be tricky! Between getting ready for work, packing lunches (and sneaking in a workout if we’re feeling ambitious) it seems like there’s never enough time. Krista Ricchezza, Focus Fitness’ resident nutrition expert, has a solution! She gives us her quick & easy egg muffin recipe. Filled with protein, eggs are a great source of nutrients to start your morning off right. Bonus: these muffins can even be made ahead and frozen in preparation for a busy week.

 

Krista’s Rise ‘n Shine Egg Muffins

Ingredients:
8 eggs (or egg white equivalent)
1 cup low fat shredded cheese of your choice
1 box frozen chopped spinach
salt, pepper
Optional:
Tomatoes
Onions
Directions:
Fill non-stick muffin tins 3/4 of the way to the top. Bake at 350 degrees for 25 minutes.
