We love creating new & interesting summer meals because of the abundance and variety of fresh fruits and yummy veggies. Unfortunately, in the wintertime it’s easy to get into a rut with the same old comfort food dishes. Even though many farmer’s markets have shuttered their doors for the season, there is still a huge variety of wonderful winter veggies to use to create a great meal.

Hands down, our favorite way to prepare ANY of these winter veggies is roasting. Choose your own veggie adventure and let us know what you think!

Easiest Roasted Veggies

-any variety of winter veggie (**add a potato to the mix to create a more complete meal!)
-olive oil
-sea salt
-red pepper flakes
-garlic powder
-black pepper
-any other seasoning of your choice (think rosemary, thyme…experimentation is encouraged here)
-optional: good-quality parmigiano-reggiano

Preheat your oven to 400 degrees. Cut up veggies and place them on a foil-covered baking sheet. (We use the non-stick kind.) Pour about 2 tbsp. of olive oil onto the veggies, just enough to make a light coating. Add seasonings of your choice. Mix together, don’t be afraid to get your hands dirty!

Place your veggies in the oven for about 10-15 minutes, flipping occasionally. When they start to caramelize, add a thin layer of parmigiano-reggiano, if desired. Most veggies will take about 25-30 minutes to cook, so keep an eye on them.

Enjoy! This recipe makes a great base for any meal–just add a carb and a protein. Roasted veggies last for a few days in the fridge, so make a big batch over the weekend to prepare for the week ahead.
